Put all ingredients in a roast pan and mix well by hand. Take about 1 tbs at a time, roll in an oblong ball and then roll in yellow corn meal. Wrap in wet tamale papers. Put tamales in a turkey pan, layer in opposite directions. Pour boiling water to completely cover all hot tamales.
Add one can tomato sauce and one oz of chili powder. Simmer 2 hours covered. Put pan across two burners on top of stove to simmer.
Makes 95 tamales.
