Smothered Chicken in Onions

2 large chickens, cut into serving pieces
Salt and pepper to taste
1 cup of oil
1/3 cup of flour
2 cups of onions, chopped
3 cloves of garlic, minced

Season chickens with salt and pepper and brown in oil, removing pieces as they are brown to make room for the remaining chicken; sprinkle flour on chicken pieces as they are browning.

When all chicken parts are brown, return all pieces to the pot and add onions and bell pepper; cover pot and cook on low heat about an hour or until chicken is tender; adding garlic and small amount of water as necessary to prevent sticking.

When ready to serve you might have to add a small amount of water to make a gravy; adjust seasonings and serve with cooked rice.
