Crawfish Bordelaise
- 1-1/2 crawfish meat
- 1 tbsp. butter
- 2 tsp. minced onion
- Red pepper
- 1/2 pt. cream sauce
- 1 glass red wine
- 1/2 tsp. salt
Cook onion in butter, add the wine, the meat and the cream sauce with seasonings. Boil up once -- serve hot (on toast if desired) or in party shells.
