Pear Relish
- 4 qt ground pears
- 2 qt ground onions
- 1 qt ground dill pickles
- 12 ground green peppers
- 2 or 3 hot peppers, ground
- 1 cup salt
- Sauce:
- 2 qt vinegar
- 2 tbs turmeric
- 8 tbs dry mustard
- 8 tsp cornstarch
- 8 tbs sugar
Combine first five ingredients, pour salt over and let stand for several hours. Drain well. Add sauce ingredients and cook very gently for about fifteen minutes. Do not let boil. Put into sterilized jars and seal.
