Pimiento Onion Relish
- 2/3 cup water
- 1/3 cup cider vinegar
- 1/2 tsp fine herbs (spice mixture)
- 2 tbs sugar
- One 4 oz jar or can whole pimientos, quartered
- 1 med onion, sliced thin
Combine water, vinegar, fine herbs, and sugar; add pimientos and onions, and marinate overnight. Drain. Serve with meat.
Yield: 1-1/2 cups relish.
