Chicken or Turkey Salad
- 2 to 3 cup diced chicken or turkey
- 1-1/2 cup diced celery
- 1 cup coarsely grated cheese
- 1/4 to 1/2 cup unsalted almonds
- Diced hard cooked eggs and/or capers
- 1 cup mayonnaise
- Diced pimento and olives
- Salt and pepper to taste
Chill the chicken or turkey, celery, almonds, eggs, capers and grated cheese. Mix together the pimento, olives and mayonnaise. Chill. When ready to serve combine the mayonnaise mixture
with the chicken or turkey mixture. Spoon into the center of each tomato and serve on a bed of lettuce.
