Chinese Wild Rice Salad

2 tbsp. oil
1 tbsp. rice vinegar
1 tbsp. chopped cilantro
2 tsp. finely minced ginger root
3/4 cup wild rice, cooked, drained, chilled
4 oz. reduced fat Swiss cheese slices, cut into 31/2 x 1/2 inch strips
1/2 cup Chinese pea pods, cut in half
1/2 cup each red and yellow peppers, cut into 2-inch strips

Mix oil, vinegar, cilantro and ginger root. Add remaining ingredients; mix lightly. Chill.

4 to 6 servings
