Chinese Wild Rice Salad

- 2 tbsp. oil
- 1 tbsp. rice vinegar
- 1 tbsp. chopped cilantro
- 2 tsp. finely minced ginger root
- 3/4 cup wild rice, cooked, drained, chilled
- 4 oz. reduced fat Swiss cheese slices, cut into 31/2 x 1/2 inch strips
- 1/2 cup Chinese pea pods, cut in half
- 1/2 cup each red and yellow peppers, cut into 2-inch strips
Mix oil, vinegar, cilantro and ginger root. Add remaining ingredients; mix lightly. Chill.
4 to 6 servings
