Beet Salad
- 1 cup Julienne beets, soaked in vinegar
- 2 fresh apples, peeled and chopped
- 1 tablespoon chopped gherkin pickles
- 1/2 cup mixed fresh fruit (as for fruit salad)
- Whipped cream
Mix all ingredients except cream. Place in a shallow dish; cover with 1/8 inch thick layer of whipped cream.
