Citrus Salad
- 1 cup salad oil
- 1/4 cup red wine vinegar
- 1/4 cup Florida grapefruit juice
- 1/2 cup sugar
- 2 tbs poppy seeds
- 1-1/2 tsp grated grapefruit peel
- 1/2 tsp dry mustard
- 1/2 lb fresh spinach, washed, torn in bite-size pieces
- 2 Florida grapefruit, peeled, sectioned
- 2 cups strawberries, cut in halves
In small bowl combine oil, vinegar, grapefruit juice, sugar, poppy seeds, grapefruit peel and mustard; mix well. Refrigerate at least one hour to melt flavors. In large bowl combine spinach, grapefruit and strawberries. To serve, pour dressing over and toss gently to coat.
Yield: 6 to 10 servings.
