Golden Marinated Mushroom Salad

1/2 lb mushrooms, sliced

1 Golden Delicious apple, cored and diced

Marinade*

4 cups cut or torn romaine lettuce

1 to 2 oz blue cheese, crumbled

Crisp bacon bits (optional)

Combine mushrooms, apple and marinade; marinate a least 30 minutes. Drain; remove garlic and reserve marinade. Combine mushroom mixture, lettuce and cheese Sprinkle with bacon. Pass remaining marinade.

Makes 4 to 6 servings.

Marinade Combine:

1/4 cup vegetable oil

3 tbs lemon juice

1 tsp Dijon mustard

1 clove crushed garlic

1/2 tsp each crushed oregano and sugar

1/4 tsp salt

1/8 tsp freshly ground pepper.

Makes about 1/2 cup.
