Spoon Bread Dressing

1-1/2 pints milk
1 tsp salt
1 tsp baking soda
1 tbs butter
3/4 cup yellow corn meal
4 eggs, separated

In a small bowl, mix 1/2 pint of cold milk, butter, salt, baking soda, and egg yolks. Set aside. Beat egg whites stiff and set aside. Heat 1 pint of milk to boiling Point. Add corn meal and cook until thick mush. Add milk, butter and egg yolk Mixture. Stir Well.

Fold in egg whites thoroughly. Pour into greased 9x12 inch baking dish and bake at 350F for 45 minutes or until golden brown.

Dressing Mix:
In skillet brown 1 lb ground meat with onions, garlic and bell peppers until onions are clear. Add 1 pint of dressing mix (your favorite) and cook slowly. Dissolve 2 beef bouillon cubes in 1 cup water and add to meat mixture. Season to taste.

When bread dressing is baked using a fork, stir in dressing mix. Add 1 small jar pimentos, onion tops and parsley for color. Taste and season again to your likes. Bake again in 350F oven for 30 minutes.

Left-overs may be frozen up to 4 months. Just serve and heat in conventional oven or microwave.
