Catfish Cajun

4-5 Catfish filets
1 teaspoon salt
1 teaspoon red pepper
1/2 teaspoon garlic powder
1/4 cup low-fat margarine
1 medium onion
1/2 red bell pepper
1/2 green bell pepper
1/2 pound mushrooms

Thaw fish fillets in water. Pat dry. Sprinkle seasoning well over dried fillets. Cut onion, red and green bell peppers into strips and mushrooms into slices. Spray electric skillet with Pam and heat to 375F. Melt margarine in pan. Cook fish fillets about 5 minutes on each side, or until flaky. Remove fillets and arrange on platter. Add more margarine to pan if necessary. Stir fry vegetables until tender, but still crunchy. Add a little water to make light gravy. Pour vegetables over fish. Garnish with parsley. Serve immediately. Serve with baked sweet potatoes and stir-fried Chinese vegetables, with a fruit salad.

Serves 4-5.
