Danish Fish

2 pounds fish filets (use catfish, shark, goo or gar)
1/2 cup seasoned bread crumbs
1 small onion
2 eggs, beaten
1 teaspoon salt
Dash pepper
Dash cayenne
1/4 cup white wine or sweet vinegar
1 teaspoon lime or lemon juice

Preheat oven to 320F. Wash fish, cut into small pieces. Soak 1 hour in wine or vinegar, with lime, or lemon. Remove fish from marinade (discard marinade). Peel onion, cut into small chunks. Rough-grind fish and onion in food processor. Put fish and onion mixture into bowl. Mix in bread crumbs. Add 2 beaten eggs. Add salt, pepper, cayenne. Let stand 1 hour. Form mixture into small patties. If too wet, add bread crumbs. Let dry. Add small amount of milk. Place patties on griddle or in heavy pan. Put into 320F oven for 30 minutes, Turn after 20 minutes. Patties may be pan fried or grilled. Serve with tartar sauce.
