Crawfish Rabbit

2 tablespoons green pepper,
1/4 cup butter or margarine
2 tablespoons all purpose flour
1/4 teaspoons salt
Dash cayenne
1/2 teaspoon powdered mustard
1/2 teaspoon Worcestershire sauce
1 cup tomato juice
1 cup sharp Cheddar cheese, grated
1 egg, slightly beaten
3/4 cup milk
1 cup cooked crawfish, diced
Hot toast or rice

In top part of double boiler over direct heat, cook green pepper and butter for 2 or 3 minutes. Blend in flour and seasonings. Put over boiling water. Stir in tomato juice. Cook, stirring until thickened. Add cheese, egg and milk. Cook stirring for 3 or 4 minutes. Add crawfish to heat. Serve on toast or over rice mound.

Serves 4.
