Orange Salmon Patties

One 15-ounce can salmon
1/2 cup onion, chopped
1/2 cup bread crumbs
1 egg
1 naval orange
Salt and pepper
1 cup cooking oil
1/4 cup brown mustard
2 tablespoons orange juice
1 teaspoon brown sugar

Preheat oven to 200F. Peel orange and cut into small pieces Clean skin and bones from salmon and combine with bread crumbs, orange pieces , onion, egg and salt and pepper. Mix by hand and shape into 8 patties. Cook in oil until golden brown. Mix brown mustard, orange juice and brown sugar. Bake in oven-proof bowl 20 minutes. Garnish with mustard sauce.

Serves 4.
