Crabmeat Imperial 2

8 oz Swiss-American Cheese grated
2 lb lump crabmeat (fresh)
6 tbs butter
6 tbs flour
3 cup cream
1 tsp salt
4 tbs red bell pepper
6 tbs green onions (chopped)
4 tbs olive oil
2 tbs chopped parsley
8 oz sliced fresh mushrooms
Salt, Tabasco, Cayenne, White Pepper to taste

Melt butter and 2 tbs olive oil. Saute bell pepper & green onions for 4 minutes. Add flour. Whisk for 1 minute. Add cream and simmer for 20 minutes. Saute mushrooms in 2 tbs olive oil. Add mushrooms to sauce. Add desired seasonings. Add chopped parsley. Remove from heat. Divide crabmeat into 8 augratin dishes. Ladle sauce over each serving. Sprinkle with fresh grated cheese. Bake in 350F oven for 20-30 minutes. Remove from oven and cool 10 minutes before serving.
