Smothered Crab

4 or 5 small clean crabs
2 large onions, chopped
2 bell peppers, chopped
Celery, chopped
Garlic, chopped
Onion tops, chopped
Parsley, chopped

Cook all the seasonings in butter until tender and add crab and cover. Cook on low fire for about one hour. Mix a heaping teaspoon of corn starch in a cup of water and add to the pot to thicken the gravy. Chop onion tops and parsley and add to pot. Serve over hot cooked rice.
