Beets

1/2 cup sugar
1/2 tablespoon cornstarch
1/2 cup vinegar
1/4 cup water or juice from beets
1 can sliced or whole beets
2 tablespoons margarine

Special Utensils: one 2-quart pot; measuring cup, spoon

Stove temperature: medium heat.

Drain beets, reserving juice to use for water. In saucepan, put sugar, cornstarch, vinegar, beet juice or water.

Bring this to a boil. Cook for five minutes. Add beets and margarine. Serve as you like, hot or cold.

Serves: 3-4
