Vegetable Squares With Cheese Sauce

1-3/4 cups herb seasoned stuffing mix
2 cups chopped broccoli
4 tablespoons margarine
1/4 cup flour
2 cups spicy hot vegetable juice
3 eggs, slightly beaten
1 can condensed cheddar cheese soup
1/2 cup milk
2 tablespoons canned chili peppers, drained

Special Utensils: 10 x 6 x 1-1/2 inch baking dish, 2 small saucepans

Preheat oven: 325F. Prepare stuffing mix according to package directions for dry stuffing. Spread in a baking dish (size listed);. top with broccoli. Melt margarine in a small saucepan; blend in flour. Add vegetable juice; cook, stirring until mixture thickens.

Stir a small amount of hot mixture into eggs, pour egg mixture back into hot mixture, then pour over chicken. Bake until knife inserted in the center comes out clean. Let stand 5 minutes before cutting into squares and serving with cheese sauce.

Cheese Sauce:
In a small saucepan, combine 1 can condensed cheddar cheese soup with 1/2 cup milk. Add chili peppers. Cook and stir over medium heat until heated through.
