Corn Patties

1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cups fresh corn, cut from the cob
4 egg whites
Canola oil for frying

In large bowl, combine the flour, baking powder, salt and pepper. Add the corn and mix well. Beat egg whites until stiff. Fold the egg whites into the corn-flour mixture. Drop a tablespoon at a time onto a slightly greased frying pan or griddle and flatten slightly with back of spoon. Cook over medium heat until brown, about 4-6 minutes; then turn and brown the other side.

Serves 8.
