Eggplant Fritters 2

1 large eggplant
20 crackers, crumbled
1 cup Cheddar cheese, shredded
1/4 cup mozzarella cheese, shredded
1 egg, beaten
2 tablespoons green onions, sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
2 tablespoons oil

Boil eggplant in covered saucepan until tender. Drain well. Mash. Cool. Stir in, cracker crumbs, cheese, egg green onions. and seasonings. Shape into 8 patties. Cook in hot oil in Teflon skillet for about 3 minutes or until golden brown.

Serves 4.
