Stir Fried Summer Squash

Pam cooking spray
1 tablespoon olive oil
2 yellow summer squash, thinly sliced
2 zucchini, thinly sliced
1 tablespoon diced garlic
2 Roma tomatoes, cut into sections
1/2 teaspoon ground sweet basil or 1-1/2 teaspoons fresh basil, shredded
6 shallots, chopped
1-12 teaspoon green Tabasco
1/2 teaspoon red Tabasco
Salt, pepper

Spray a large skillet with Pam. Add olive oil. Heat to medium-high. Add squash, zucchini and garlic.

Stir almost continuously for 1 minute. Add green and red Tabasco and tomatoes. Stir 1 minute more. Reduce heat to medium.

Add shallots, basil and salt and pepper to taste. Cook 3 minutes more or until squash and zucchin1 are cooked, yet somewhat crisp. Serve immediately.

Serves 4.
