Potatoes 3

6 medium russet potatoes
2 hard-boiled eggs, diced
11 medium raw onion, diced
1 cup green onions, diced
1/2 cup green olives, diced
3/4 cup nacho-sliced jalapenos peppers, diced
4 tablespoons sweet relish
2 tablespoons parsley, chopped
1-1/4 cups mayonnaise
1 teaspoon garlic mustard powder
Salt to taste

Peel potatoes and boil until tender, drain and mash completely. Let mashed potatoes cool in one large mixing bowl. Add diced egg and remaining ingredients. Mix well. Garnish with parsley sprigs or place potato salad in hollowed-out tomatoes, or serve in a bowl.
