Eggplant Fritters 3

1 large eggplant (about 1-1/2 lb)
1-1/2 to 1-3/4 cups fine dry bread crumbs
2 eggs, slightly beaten
1/2 cup sliced green onions
2 tbs parsley
1 small onion (chopped very fine)
1/2 tsp garlic powder
1/2 tsp salt
Hot sauce, several drops
Vegetable oil

Peel eggplant and cut into 1 inch cubes. Cook in a small amount of boiling water 10 minutes or until tender. Drain well and mash. Add other seven ingredients. Mix well. Add more bread crumbs it the mixture is too soft.

Shape into 16 balls. Pour oil to depth of 2 to 3 inches in Dutch oven. Heat to 375F. Fry fritters until golden brown.
