Orange Yams

6 med yams
3 tbs melted margarine
1 cup orange juice
2 tsp grated rind
2 tbs lemon juice
1 tbs cornstarch
1/3 cup sugar
1/3 cup brown sugar
1/2 tsp salt

Scrub yams and boil in skins until tender (about 30 minutes). Drain and peel or use canned yams. Cut in halves or 1/2 inch slices and arrange in greased baking dish.

Note:
For an exceptionally pretty dish, place thin slices of fresh orange with peel diagonally across top of potatoes before adding sauce.

Combine remaining ingredients; cook, stirring until thickened. Pour over yams; cover and bake 20 minutes in 350F oven. Uncover and bake 15 minutes longer. Garnish with parsley.

Serves eight to ten.

Freezes well.
