Mango Pepper Appetizer

1-1/2 cup mange slices, chopped
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
1 cup celery, chopped
1/3 cup green onion tops
One 8-ounce can corn, rinsed
One 16-ounce can small black beans, rinsed
Dressing:
1/3 cup olive oil
1/3 cup vinegar, wine or cider
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons fresh cilantro, minced
2 tablespoons fresh parsley, minced
2 tablespoons sugar
1 clove garlic, minced
Salt, cayenne and coarse black pepper to taste

Place rinsed beans and corn in a serving bowl. Chop the rest of the vegetables into pea-sized pieces. Add to bowl. Mix dressing well. Correct seasonings to taste. Toss vegetables with dressing. Chill, toss again.

Serves 6-8.
