Garden Delights

1 to 2 oz blue cheese
1/2 cup finely chopped toasted pecans or walnuts
1/2 cup finely chopped celery
1/3 cup mayonnaise or salad dressing
1/3 cup dairy sour cream
Grated peel of 1/2 lemon
1/4 tsp sugar
Cherry tomatoes, hollowed out*
Medium size mushrooms, stems removed
Celery ribs, cut in 2-inch pieces

Crumble blue cheese into small mixing bowl. Add next six ingredients and mix well. Spoon small amount of filling in to prepared tomatoes, mushrooms and celery.

To Hollow out Cherry Tomatoes:
Remove any stems. Cut a thin slice off bottom of each tomato (not stem end). Scoop out centers with the small end of a melon-bailer or iced tea spoon. Tomato cups will now sit upright on stem end.

Yield: About 1-1/3 cups filling
