Hog Head Cheese

1 med Hog head
1 med Bottom Round Roast
4 large onions
3 large bell peppers
2 banana peppers
4 cloves garlic
1/2 cup parsley
1-1/2 cups onion tops
2 tbs of Tony Chachere's Powder
4 tsp garlic powder
3 tsp black pepper
2 tsp salt
Meat broth

Boil hoghead and round roast, till meat falls apart. Keep some of water as broth, pull meat apart and grind up, Cook meat again, add all ingredients. Slowly add broth as cooking so it will thicken. Cook slowly for 1 hour. Pour into pan and it will gel and get firm.
