Holiday Chicken Cups

1 tbs vegetable oil
1 tsp soy sauce
1 tsp chopped chives
1 med clove garlic, minced
1/4 tsp ground ginger
1/8 tsp crushed red pepper flakes
10 oz cooked chunk white chicken
1/2 cup mandarin orange segments
Coarsely chopped 16 wonton cups (recipe follows) or assorted crackers

In medium bowl, combine oil, soy sauce, chives, garlic, ginger and pepper. Add chicken and orange segments; toss gently to coat. Serve in wonton cups or with assorted crackers.

Makes 1-3/4 cups.

Wonton cups:
Lightly brush wonton wrappers with vegetable oil. Gently press wrappers into 1-3/4 inch muffin cups. Bake at 400F for 9 minutes or until lightly browned. Transfer to wire rack to cool.
