Honey Ham Florentine Spirals

6 slices (1/2 lb) Del1 Honey Cured Ham
1/2 cup finely chopped onion
1 clove garlic, minced
1 tbs olive oil
One 10 oz pkg frozen chopped spinach, thawed, squeezed almost dry
1/3 cup plain yogurt
1/4 cup seasoned dried bread crumbs
1 tbs Dijon mustard
1/8 tsp ground black pepper
6 flour tortillas, 7-inch diameter
1 cup (4 oz) shredded Monterey Jack cheese

Saute onion and garlic in oil in medium skillet 2 to 3 minutes, or until onion is tender. Remove from heat. Add spinach, yogurt, bread crumbs, mustard and pepper; stir until well blended. Assemble as directed above. Arrange slices in 15-1/2 x 10-1/2 x 1 inch jelly roll pan; cover tightly with aluminum foil. Bake at 400F about 8 minutes or until heated through.

Makes 48 appetizers.
