Honeydew-Kiwi Ice

1 cup water
2/3 cup sugar
1 med-size, ripe honeydew melon, peeled, seeded, cut in chunks
2 ripe kiwi fruit, peeled, cut in chunks
3 tbs freshly squeezed lime juice
1/2 tsp freshly grated lime rind
2 large egg whites

In small saucepan combine water and sugar; stir over medium heat until sugar is dissolved. Remove from heat; Chill. In container of electric blender or food processor puree honeydew. (You should have 4 cups) Puree kiwi fruit. (You should have 1/2 cup) Combine purees, sugar syrup, lime juice and rind. Pour mixture into shallow metal pan. Freeze until almost firm. Transfer to mixer bowl or food processor, add egg whites; beat until smooth. Cover. Freeze until firm.

Makes about 10 cups; 12 servings.
