Roast Beef, Blue Cheese and Green Peppercorn Sandwiches

2 oz blue cheese, crumbled
One 3 oz pkg cream cheese, softened
One 7-1/2 oz pkg poppy seed finger rolls
12 very thin slices rare roast beef
1-1/2 tbs green peppercorns in brine, drained

Mash blue cheese and cream cheese together until smooth. Put into a pastry bag fitted with a small star tip. Separate rolls and split each lengthwise down the top center being careful not to cut all the way through each roll. Fill rolls with roast beef and pipe cheese mixture on top. Sprinkle with peppercorns.

Makes 12 finger sandwiches.
