Fiesta Corn Bread

1 cup all-purpose flour
2 cups corn meal
4 tablespoons baking powder
1/2 tablespoon salt
4 teaspoons baking powder
2 tablespoons sugar
1-1/2 cups cheese, shredded
8 ounces canned corn
One 4-ounce can of mild green chilies chopped, and drained
1 cup milk
2 eggs, beaten
1/4 cup shortening or oil

Heat oven to 400F. Pour oil or shortening in a 6 x 9 inch pan or 9 inch oven proof skillet. Combine dry ingredients. Add milk, corn and chillies and blend; add eggs and shortening. Leaving part of the melted shortening in the pan. or skillet, blend together. Pour in hot pan/skillet and bake 10-15 minutes, until golden brown. Test with wooden pick until it come out clean.

Note:
This recipe also makes original old fashioned corn bread. Just exclude cheeses, corn and chilies.
