Carrot Orange Bread

4 eggs
2 cups granulated sugar
1-1/4 cups vegetable oil
3 cups all-purpose Hour
2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground nutmeg
2 teaspoons ground cinnamon
2 cups loosely packed, shredded carrots
One 11-ounce can Mandarin oranges, drained
3 teaspoons grated orange peel

Preheat oven to 350F. In a large mixing bowl, beat eggs and sugar. Slowly add oil and continue beating until smooth. Sift together flour, baking powder, baking soda salt nutmeg and cinnamon. Add flour mixture to egg mixture, heating until smooth. Stir in carrots, oranges and orange peel. Pour batter into 3 well greased 7-1/2 x 3-1/2 x 2-1/2 inch loaf pans. Bake 45-50 minutes, or until a wooden toothpick inserted in the center comes out clean. Remove from pan and cool on wire rack.

Makes 3 loaves.
