Basket Cases

One 14-1/2 oz pkg gingerbread mix
1/2 cup canned pumpkin
2 eggs
1/2 cup lukewarm water

Combine gingerbread mix, pumpkin, eggs and water in a mixing bowl. Blend with a wooden spoon until well combined. Line four plastic pint-size baskets (such as those containing strawberries or cherry-tomatoes) with wax paper. Divide batter among the four baskets. Place baskets on a microwave-safe tray, rotating each basket one-half turn midway through cooking, microwave on 70% (Medium High) 7-1/2 to 8-1/2 minutes, or until gingerbread tests done. Let stand flat on counter 5 minutes before removing from wax paper.

To give as gifts, wrap individual loaves in plastic wrap, then in colored cellophane such as that used for fruit baskets. Decorate plastic baskets with ribbon or as desired.

Makes 4 "basket-sized" loaves.
