Orange Cornbread

1-1/2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tbs sugar
4 tsp baking powder
1/2 tsp salt
1 cup milk
1 beaten egg
1/3 cup cooking oil
2 tsp finely shredded orange peel

In a bowl combine cornmeal, flour, sugar, baking powder, and salt. Stir in milk, egg, oil and orange peel just till smooth (do not over beat). Pour into a greased 9 x 9 x 2 inch baking pan. Bake in a 400F oven for 20 to 25 minutes.

Serve hot or use to prepare Sausage and Orange Cornbread Stuffing.

Makes 8 or 9 servings.
