Orange Cranberry Bread

2 cups all-purpose flour, sifted
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup (8 oz) diced orange peel
1 egg, lightly beaten
1/2 cup orange juice
1/2 cup frozen cranberry juice concentrate, thawed
3 tbs butter or margarine, melted
1/2 cup coarsely chopped pecans

In mixing bowl, combine flour, sugar, baking powder, soda and salt. Stir in orange peel. In another bowl, combine egg, orange juice, cranberry juice concentrate and butter. Add to dry ingredients. Stir just until moistened. Fold in pecans. Pour into greased 8-1/2 x 4-1/4 x 3 inch loaf pan. Bake in preheated 350F oven about 1 hour until inserted toothpick comes out clean. Cool in pan 10 minutes Remove from pan to cool completely on wire rack.

Makes 1 loaf.
