Orange Nut Bread

2-1/2 cups all-purpose flour
4 tsp baking powder
4 tsp salt
3/4 cup chopped nuts
1-1/2 cups mixed diced candied fruit
1/3 cup seedless raisins
1/2 cup shortening
3/4 cup sugar
3 eggs
1/2 cup mashed banana
1/2 cup orange juice

Combine flour, baking powder, and salt. Stir in nuts, can dried fruit, and raisins.

Cream shortening, add sugar, and beat until light and fluffy. Add the eggs, one at a time, beating well after each addition.

Combine banana and orange juice; add to creamed mixture alternately with flour mixture, beginning and ending with flour mixture.

Spoon batter into a waxed paper-lined and greased 9 x 5 x 3 inch loaf pan. Bake at 350F for 1 hour. Let bread cool in pan about 30 minutes before turning out on cake rack.

Yield: 1 loaf.
