Pineapple-Pumpkin Bread

1-3/4 cups all-purpose flour
2 tsp baking soda
1/2 cup granulated sugar
1/2 cup packed light brown sugar
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1 cup canned pumpkin
1/3 cup vegetable oil
1/4 cup orange juice or water
2 eggs
1/2 cup chopped (4 oz) glace green pineapple, diced or wedges, coarsely chopped
1/2 cup (4 oz) glace red pineapple, diced or wedges, coarsely chopped
1/4 cup (2 oz) glace fruit and peel

Mix flour, baking soda, salt, sugars and spices in large mixing bowl. Mix pumpkin, oil, orange juice and eggs; stir into flour mixture just until blended. Stir in glace pineapple and fruit and peel. Pour batter into greased 9 x 5 x 4 inch loaf pan. Bake in preheated 350F oven until toothpick inserted in center of bread comes out clean, about 1 hour. Cool in pan on wire rack 10 minutes; remove from pan and cool on wire rack.

Makes 1 loaf.
