Savory Cheese Muffins

2 cups sifted self-rising flour*
1 cup (4 oz) grated sharp Cheddar cheese
1 tsp dry mustard
1/2 tsp chil1 powder
1 cup milk
1/4 cup vegetable oil or shortening, melted and cooled

Preheat oven to 425F. Grease muffin pans. Combine flour, cheese, mustard and chil1 powder in mixing bowl; set aside. In another bowl, beat egg; stir in milk and oil. Add liquid ingredients all at once to flour mixture. Stir only until flour is moistened. Fill muffin cups 2/3 full. Bake about 18 minutes or until golden brown.

Makes about 12 muffins.

*If using all purpose flour, sift 3 tsp baking powder and 3/4 tsp salt with flour.
