Chicken Casserole 2

One 3-pound chicken
1 cup chopped celery
1 cup mayonnaise
1 large chopped onion
1 cup chopped almonds (optional)
1 can cream of mushroom soup
2 stacks Ritz Cracker (crushed)
1 cup butter (melted)

Preheat oven to 350F. Boil and debone chicken. Cut chicken into bite-sized pieces. Mix chicken celery, onion, mayonnaise, almonds and soup. Place in casserole dish uncovered. Bake for 45 minutes or until bubbly. Mix crushed Ritz crackers and butter. Spread over casserole and continue to bake until cracker crumbs are golden and crisp, approximately 15 minutes.
