Chicken Casserole 7

Boil 1 chicken (salt to taste) with:
4 stalks of celery
1/2 bell pepper
2 medium sized onions

Chop vegetables to your liking. When chicken is done take it out and cut pieces off bone and chop. Remove vegetables from chicken broth and set aside.

Using the chicken broth, boil 2 cups macaroni; when macaroni is tender, remove from heat and drain. To the macaroni, add the chopped chicken, vegetables, 2 cans cream of chicken soup, 2 oz jar chopped pimientos, 2 small jars Cheese Whiz (1 hot and 1regular). 1 small can petit pois peas, and more salt and pepper if needed.

Mix this all together and pour into casserole dish.

Makes 3 quarts.

It can be frozen in meal size containers. Bake at 375F until bubbly hot.

Note: Small can mushrooms may be substituted for peas.
