Crawfish Casserole 12

1/4 lb margarine
1 cup chopped onions
1 cup green peppers
1 cup chopped celery
2 cloves garlic
1/3 cup chopped parsley
1 cup chopped green onions
1 can cream of mushroom soup
1 can cheddar cheese soup
3 cups (1 lb) crawfish, shrimp or crab
2 cups cooked rice
1/4 cup and 1 tbs Italian bread crumbs
2 tbs hot sauce
1 tsp black pepper
1 tsp salt

Saute onions, pepper, garlic & celery until tender in butter. Add soups, parsley, green onions, crawfish. Heat until creamy then stir in cooked rice. Cook in 3 quart casserole. Sprinkle bread crumbs and bake at 350F for 30 minutes or until bread crumbs are brown.
