Crawfish Casserole 15

1/4 lb margarine
1 small onion, chopped
1 small bell pepper, chopped
2 stalks celery, chopped
Tabasco to taste
1 lb crawfish tails
1 can cream of mushroom soup
1/2 cup milk
3/4 lb Velveeta cheese
8 oz egg noodles, cooked and drained
3/4 single pack saltine crackers finely crumbled

1 can 6-1/2 oz tuna, drained, or crab meat may be substituted for crawfish tails.

Preheat oven to 375F. In large skillet, saute onion, bell pepper and celery in margarine until tender, Add all other ingredients except crackers and mix well. Simmer until meat is done. Pour mixture into 1-1/2 to 2 quart slightly greased casserole. Top with crackers dotted generously with margarine. Bake at 375F for 35-40 minutes. Remove cover for last ten minutes to brown.
