Crawfish Quiche 2

3/4 lb crawfish tails
1 cup sliced fresh mushrooms
1/4 cup chopped green onions and tops
1/4 cup melted margarine
4 eggs, well beaten
1-1/2 cups half and half cream
1 tsp salt
1/8 tsp dry mustard
1/8 tsp nutmeg
1 cup shredded Mozzarella cheese
1 unbaked 9 inch pie shell

Chop crawfish. In small saucepan, cook mushrooms and green onions in margarine until tender. In large bowl, combine eggs, cream, salt, dry mustard, nutmeg and cheese. Fold in crawfish. Pour mixture into pie shell. Bake at 400F for 15 minutes. Reduce heat to 300F and bake for 30 minutes. Quiche is done when inserted knife comes out clean. Let stand 5 minutes.
