Cheese Cake Glazed

2 tbs Graham Cracher Crumbs
One 16 oz pkg Cottage Cheese
One 16 oz pkg Softened Cream Cheese
One 16 oz pkg Sour Cream
1-1/2 cup Sugar
4 Slightly Beaten Eggs
1/2 cup Melted Butter
1/3 cup Cornstarch
2 tbs Lemon Juice
1 tsp Vanilla Extract
1 cup Washed & Hulled Strawberries
1/2 cup Sugar
1-1/2 tbs Cornstarch
1-1/2 tsp Orange Extract
Whole Washed & Hulled Strawberries

*** Grease a 9 inch springform pan. Dust generously with graham crumbs. Combine cheese; beat on high speed of electric mixer until smooth. Gradually add sugar, beating after each addition. Add eggs, beat well. Add next 5 ingredients. Beat on low speed until mixture is smooth. Pour batter into pan and bake at 350F for 1 hour and 10 minutes. Turn oven off and let cheesecake stand in oven for 2 hours. Cool completely then cover and chill for at least 4 hours. Arrange whole strawberries on top of cheesecake. Drizzle with strawberry glaze. Chill thoroughly.

Yield: 10 To 12 Servings

Strawberry Glaze
1 cup Strawberries, Washed & Hulled
1/2 cup Sugar
1-1/2 tbs Cornstarch
2 tbs Grand Marnier or 1-1/2 tsp Orange Extract

*** Mash strawberries. Combine berries, sugar & cornstarch in a heavy saucepan. Stir well. Cook over medium heat until thick, stirring constantly. Stir in grand marnier. Cover & chill.

Yield: 3/4 Cup Glaze
