Fruitcake White

1 cup Butter
2 cups Sugar
8 Whites of Eggs
1/2 cup Cider or White Wine
1 Fresh Grated Coconut
1 tsp Vanilla
1 tsp Lemon Extract
4 cups Sifted Flour
1 tsp Baking Powder
1 qt Pecans
1/2 lb Citron
1 lb Candied Cherries
1 lb Candied Pineapple
1 Box White Raisons

*** Cream butter and sugar together. Add egg whites (one at a time), cup cider or wine, coconut, vanilla, and lemon extract. Then add flour with baking powder. Then add pecans. Last add citron, cherries, pineapple, and raisins. Use extra flour for dredging fruits before adding to above mixture.

Keep in airtight box for several days then freeze.
