Pineapple Upside Down Cake 3

1/2 cup Shortening
1 cup Sugar
2 Eggs
1-3/4 cup Sifted Flour
1 tbs Baking Powder
3/4 tsp Salt
2/3 cup Milk
1/2 tsp Vanilla Extract
1/4 cup Butter
1 cup Brown Sugar
5 Slices Pineapple
5 Marachino Cherries

*** Cream shortening and sugar. Add eggs, one at a time and beat well. Add sifted dry ingredients alternately with milk and vanilla; mix well. Melt butter in 9-inch square pan. Sprinkle with brown sugar; stir until melted. Arrange pineapple slices in pan; place cherry in center of each slice. Pour batter over topping. Bake in 350F oven for 50-60 minutes until done.
