Banana Macadamia Muffins

1/3 cup shortening
2/3 cup Cajun Crystals sugar
2 eggs
2 med., very ripe bananas, mashed
2 tsp. baking powder
1/4 tsp. baking soda
1-3/4 cup flour
One 3.5-oz. jar macadamia nuts, finely chopped

Preheat oven to 425F. Cream together shortening and Cajun crystals. Beat in eggs and then bananas. Mix well. Add baking powder, baking soda, and salt. Gradually beat in flour, fold in macadamias. Spoon into muffin pan about 3/4 full. Sprinkle with additional Cajun crystals and bake 15-20 minutes. Check doneness at 15 minutes.
