Seven-Up Cake 2

1 box yellow or pineapple cake mix
4 eggs
One 3.9 oz. instant pudding mix
3/4 cup cooking oil
One 12-oz. 7-Up, room temperature

Filling or Frosting:
1 cup sugar
1 heaping tsp. cornstarch
1/2 cup margarine
1 No. 2 can crushed pineapple
1-1/2 cup flaked coconut
1 tsp. vanilla
1 cup coarsely broken pecans

Preheat oven 325F. Beat all ingredients together for two minutes with electric mixer. Grease and flour your baking pan. You can use Three 8 inch cake pans. Pour batter into bake pan. Bake at 325F for 25-30 minutes.

Filling or Frosting: Combine sugar, cornstarch, margarine, crushed pineapple, flaked coconut. Cook over medium heat. Stir until thick. Remove from heat and add vanilla and pecans. Cool before spreading. If using 15 x 10 inch pan, leave cake in pan and spread frosting over top.
